Mimi’s Wagon Is a Food Truck Calhoun County Needs to Check Out

There’s always something fun about hearing people talk up a food truck and finally deciding to go see for yourself if it lives up to it.

That was the case for us with Mimi’s Wagon. We had been hearing good things, so when we saw them set up in Martin’s parking lot on a beautiful day, it felt like the right time to give them a try. Food trucks get featured there from time to time, and Mimi’s Wagon looked right at home.

One of the things I always enjoy about trying a new food truck is taking in the whole setup before even ordering. The look of the truck, the smell coming from the window, the menu, the crowd around it, all of that is part of the experience. Mimi’s Wagon had that kind of setup that makes you feel good about it before you ever take the first bite.

After a quick look over the menu, one thing jumped out fast: the Havoc Smash Burger.

When you read the description, it’s hard not to stop right there. BBQ pork, two slices of cheddar cheese, onion straws, pickles, and bacon jam piled onto a smash burger. Yeah, that’ll do it.

I added fries and a drink and waited on what I already knew was not going to be some neat little burger you eat with two hands and a clean shirt.

This thing was a monster, but in the best possible way.

The Havoc Smash Burger is the kind of burger that feels like it was built for people who appreciate a little chaos on the plate. It’s stacked high, messy, overloaded, and absolutely unapologetic about it. The pulled pork alone adds a whole extra layer to it, but once you throw in the cheddar, onion straws, pickles, and bacon jam, it turns into one of those burgers where every bite is doing about five things at once.

And somehow, it works.

The smash burger itself had that good crust and flavor you want, and the pulled pork brought in that smoky, tender barbecue element that made it feel bigger than just a burger. The cheddar added that rich melt you want holding everything together, while the onion straws gave it a crunchy bite that kept the whole thing from feeling too heavy. Then you get the pickles cutting through it with a little tang, and the bacon jam comes in with that sweet and savory thing that takes it over the top.

It’s one of those burgers where the flavors keep shifting depending on the bite. One second you’re getting smoky pork and beef, then the next it’s bacon jam and pickles, then the onion straws show back up and remind you this whole thing was built to make a mess and be worth it.

And yes, it was messy.

But that’s not a complaint. A burger like this almost needs to be messy. If it isn’t, something probably went wrong.

The fries were really good too. Crispy on the outside, soft on the inside, and exactly what you want next to a heavy hitter like the Havoc Smash Burger. Sometimes fries are just kind of there because they have to be. These were not that. They held their own and made the combo feel complete.

What I liked about Mimi’s Wagon is that it didn’t feel like they were trying too hard to be trendy or overcomplicated. It just felt like they knew what they were doing and were focused on putting out food that people would actually want to come back for. The menu has a solid lineup of smash burgers, sliders, sides, and even fried Oreos for dessert, but if you want something that really shows what they’re about, the Havoc Smash Burger is a pretty strong place to start.

If you’ve been seeing Mimi’s Wagon around Calhoun County and have been wondering whether to give it a try, I’d say go ahead and do it. If you’re the kind of person who likes a burger that’s loaded down, full of flavor, and a little over the top in all the right ways, this one is worth your time.

Mimi’s Wagon showed up, smelled great, looked the part, and delivered on the food. That’s pretty much all you can ask for from a food truck, and in this case, they gave a little more than that.

The Havoc Smash Burger definitely made an impression.

If you go, just grab extra napkins and don’t wear your best shirt.
